Bread 41 is an Organic bakery located in inner city Dublin. As a business, they make mindful business decisions that connect the environmental impact, the prosperity and welfare of the team members, customers, and suppliers as well as the enrichment of the communities they live and work in with a strong focus on business sustainability and ethical growth.


 The vision of Bread41 is to create a movement that reaches into every community throughout the island of   Ireland and their purpose is  “we want everyone to get back to eating real bread and to appreciate real   handcrafted pastries, amazing seasonal food and to drive exceptional hospitality in a sustainable way".

 "We are striving towards being a zero waste food business. Through data analytics we only produce what is    required for any given day while any food waste from our eatery is managed through decongesters onsite to   turn any food waste into compost which in turn returns to the land of the farmers we use."

  The bakery is also currently working to the B Corp framework and has submitted for B Corp certification 
   while they also closely align with the SDG framework. The focus has been put on SDG 12 (Responsible     
   Consumption and Production),
SDG Goal 2 (Zero Hunger)
, along with SDG 4 (Education).



The bakery further aims to exemplify that within the food industry especially, there is a need for empowerment regarding sustainability and that it is possible to make an impact. Climate change, food waste, biodiversity loss and labour practices are among the many challenges facing our industry today. Addressing these sustainability challenges requires collaboration and collective action across the food industry, from producers and manufacturers to retailers and consumers and an alignment to frameworks like B Corp/SDG models to help businesses migrate towards a more sustainable future.

Removal of single use cups

Eradication of single use cups: 
For over two years, the bakery has not sold any single use cups from Monday to Friday, and from the 1st February 2023 they extended this to 7 days a week. So far they have saved over 31,165 cups going to landfill.
Impact
Economic impact
Reduction to zero of disposable spend on cups, realising significant savings to our operational costs.
This has been offset a little with the upfront investment needed in reusable cups. These reusable cups are given out on a deposit / return system, or sold to customers who need them. This recoups both upfront costs and cover operational costs associated with selling the product.

Social impact
Changing consumer behaviour for the better by creating nudge opportunities in creating a circular mindset.
More customers are also stopping and sitting down for a coffee creates more social interactions. 

Environmental impact
Prevented 31,165 single use cups going to landfill.

Human resources
Staff training to properly communicate the change and the reasons behind the transition to single use. Some staff training and support to deal with customers who did not agree with the decision.

Financial resources
Significant savings from the opex budget as they no longer need to purchase single-use cups. Savings in 2022 were circa €6233.
